This is a side dish my husband has fallen in love with. We go to Pennsylvania almost monthly and that's where he originally had the lima beans and of course I had to try to replicate them. lol
BBQ Lima Beans
1 bag frozen Lima Beans, I like fordhook limas. 2 tbsp. butter 1/2 lb. chopped ham 1 medium onion, chopped 1 tbsp. vinegar 2 tbsp. brown sugar 1 1/2 c. ketchup 1/2 c. cool water 2 tbsp. cornstarch 1/2 tsp. black pepper
Saute onions and ham in butter, add vinegar and sugar. Mix cornstarch in cool water then add to the onion mixture, mix in ketchup. Boil lima beans for 10 minutes, drain and add to sauce. Transfer to a 2 quart casserole dish and bake at 350 degrees for 30 minutes.
