Ok I have to admit I can not tell you whether this is a great idea yet or not. I can say that I have frozen a good bit of mint leaves. I have a little pixie forest (my nickname for my over abundance of mint) of sweet mint and spearmint. I love mint tea but no one else in my family does so I read you could do this so of course I am. I dried a lot last year but I really like to make tea out of leaves. I will pass on to you what I did.
I cut my mint, lightly rinse the leaves and set on papertowels to dry.
Pat the leaves dry then remove from stems.
I choose the amount I like for my tea then lay them on a doubled over set of two papertowels then fold over the papertowels again after you lay out the leaves.
Place in a freezer safe bag. I was able to do enough for 3 or 4 gallons of tea and separated each with wax paper.
I use a good cup to cup and a half of mint leaves added to boiling water to make a gallon of tea.
*You can use regular tea bags if you wish to have mint flavored tea. I mostly just use my mint leaves.
**If you have peppermint plants make sure to freeze them with the spearmint leaves. It makes for better tea. I have no peppermint and wish I did because I love mint tea with the peppermint and spearmint combination.
