I could fix beans one way or another every day. I don't but I could. haha This is an easy way to make them. Hope you enjoy.
Easy Butter bean or Lima bean casserole
6 bacon slices, cut into small pieces 1/2 c. onion, minced 1 16 oz. package frozen butter or Lima beans 1/4 c. brown sugar 1/4 c. butter 1 tsp. salt 1 tsp. black pepper 3 c. chicken broth
In a large pot cook bacon and onion, over medium heat, for about 7 minutes. Add brown sugar and cook until sugar is dissolved. Stir in beans and butter. Cook and stir until butter is melted and beans are coated thoroughly.
Stir in 3 cups of chicken broth. Bring to a boil over medium-high heat, reduce heat to low and simmer, stirring occasionally. Let simmer for about 2 hours or until beans are tender and the liquid is thick. Before serving stir in salt and pepper.
*Make sure to stir occasionally during the simmering.
