Earlier in the week I made lemon fudge. I was not a fan of it but my boys liked it. Today I made the Orange Creamsicle Fudge and it is awesome! I thought I'd try these since they are colorful and would be a special treat for Easter.
Orange Creamsicle Fudge
2 1/2 c sugar 1/2 c. butter 1 7 oz. jar marshmallow creme 2/3 c. evaporated milk 1 pkg. white chocolate chips 3 tsp. orange extract 12 drops yellow food coloring 9 drops red food coloring
Line a 9 x 13 baking dish with foil and grease with butter or cooking spray. In a medium size, heavy duty saucepan, combine sugar, evaporated milk and butter. Cook and stir over low heat until sugar is dissolved.(this took me about 20 minutes) Bring to a boil, cook and stir for 4 minutes. Remove from heat and stir in white chocolate chips and marshmallow creme and stir until smooth. Remove 1 c. and set aside. To the large amount add the orange extract and food colorings. Stir until blended. Pour into greased pan. Spoon 8 dollops of the reserved white mixture into the orange. Cut through the white dollops with a knife to swirl. Cover and refrigerate until set.
