We love to have cucumbers and onions at every cookout and family get together. As a matter of fact everyone looks for them when we show up. I grew up with my grandmother always making them and now my family enjoys me making them. Hope you enjoy them also.
Cucumbers and Onions
3 large cucumbers, peeled and sliced thin
1 large onion (I like red onions or sweet ones for this recipe), sliced thin
1 cup sugar
1cup water
1 cup white vinegar
2 heaping tbsp mayonnaise
Salt and pepper to taste
Mix vinegar, sugar, water, mayonnaise, salt and pepper with a wire whisk. Add cucumbers and onions and refrigerate for several hours or overnight before serving.
***You can omit the mayonnaise if you prefer.
