I love a fresh peaches paired with ice cream. One year when I was making my peach preserves they didn't set up as firm as I would like so I used the batch for ice cream topping. Ever since that tasty mishap I have enjoyed fresh peach topping by using this recipe.
Peach Ice Cream Topping
2 c. chopped peaches 1 1/2 tbsp. cornstarch 1 c. sugar 1/2 tsp. lemon juice dash of cinnamon (optional)
Stir all ingredients over medium-high heat until thick. This will only take a couple of minutes. Cool a bit and enjoy right away or store in an airtight container in the refrigerator.
